Healthy Life Carrot Salad Sandwich

A healthy, fresh sandwich that is good any time of the year!

Ingredients:

  • 1/2 ripe banana, peeled
  • 1 cup shredded carrots
  • 2 tsp lemon juice
  • 2 lettuce leaves
  • 4 thin apple slices
  • 2 slices Healthy Life Bread, toasted

Directions:

  1. Mash banana in a bowl.
  2. Mix in carrots and lemon juice.
  3. Place lettuce on 1 slice of Healthy Life Bread.
  4. Put carrot mixture on top of lettuce.
  5. Top with apple slices and top slice of bread.
